Is it possible to make a skittish roo more friendly?

My current rooster is the best I've had. He's not terribly skittish, but he does give me a wide berth, and doesn't get excited when I need to tend to one of the hens. That's a nice change from his predecessors, all of whom made excellent soup.

I never make a rooster a pet, just in case something happens and we have to cull.

sometimes they abuse the hens.
