If I put a egg in a plastic box in my snakes tank (on the heat mat) and turn it 3 times a day, is it likely to hatch? I think the tank is usually 25-30°c

You would have to measure the temp regularly and keep the humidity up. I have hatched with a heat lamp and sponge, it should be possible.

The snake will really want to eat the egg.

I think the danger here is uneven heating. It could get burns from the heat mat, or if not burns it may just not be warm enough. I would not put the mat under the egg... but maybe close to it not touching it? Not sure.
