Is my 8 week mottled Cochin a hen or roo?

If it weren’t for how pink her wattles are I wouldn’t worry so much. her comb itself is actually quite yellow though it looks red from the coloring on her head. Can’t seem to show that in photos though it’s clear in person. She was sexed as female before being sent from MPC and she’s the only Cochin I’ve ever had so I don’t have anything to compare her to!

Yeah, that one is a tough call. If it weren't for the wattles I would say pullet. As it stands, I am not sure, yet. Could go either way. If I were you I would wait a couple of weeks and give it another shot. During that time, if the comb/wattles grow and redden up, then you've probably got a cockerel.
 
Based on wattle development, and that I think I see some long feathers on the saddle, Im going with cockerel. Here is my youngest cochin, at 16 weeks. Every feather is round along her saddle. Yours look pointy and long.
