I have a English araucana rooster who is a good rooster but recently he has been in a mood where he only wants to mate one of my hens, that is my only batham hen. He mates her because she is not the fastest and have a top on her head so he can easily hold onto her.
I just feel really bad every time he does it bc she is so small, he has done it every morning constantly for the past 2 weeks.

The hen he mounts is also a very shy hen who just came out of her shell but because he keeps jumping her he steels all her confidence away.

How many hens/pullets do you have?
Roosters will often over breed an especially submissive hen. If he's only like that with her, I wouldn't think it is his fault as much as it's just due to the interplay between them. She is meek so she readily submits to him, he takes that submission as being willing. You may have to decide which one you'd rather keep, because it's unlikely to change IME.

He really tries to do the same with the all the other hens except my marans, I have 5 hens and he tries to get three of them every morning. The thing is the other two are fast enough to run away from him but the little one isn’t. Earlier in the year when we put 2 new chickens in the flock the small one and the rooster instantly went together well and still do if he is not jumping her😊

That's not unusual, roosters are especially randy in the morning for some reason. This is where chicken math comes in, if you get 4 or 5 more pullets, that should help to alleviate the situation. :)
That observation can be found in human males too, lol.

You mentioned he's taking away her confidence but is he harming her in any way? Is he pulling out feathers or scratching her up with his nails? If it's all relatively a smooth mating process, I wouldn't necessarily think it's too much unless she is paranoid of him.

Your rooster is not rough at all unless he is actually injuring her. As soon as they can see daylight in the mornings a rooster will often immediately start trying to dance and mount hens. It's also not uncommon for a rooster to have a favorite hen either. However, many if not most roosters do need more than 5 hens to keep them happy. There are exceptions who are perfectly content with a smaller harem, but the majority of roosters will need more than 5 to prevent over breeding.
