Is there a chart with optimum age/weight to process DP birds?

When purchasing layers I chose DP breeds. Of course some turned out to be roos. I need to know when to process the different breeds, or when they stop gaining weight and quality of meat declines. Buff Orp, Wyandotte, Australorp, Faverolles, Marans.
 
The beauty of DP birds is that there is no "expiration date" for them - you can process early or late, and your window of opportunity runs about 15 weeks to 2 years+ depending on what you are looking for.

I've personally eaten DP between 15 weeks and 2 years old, and each was delicious when cooked the appropriate way for it's class
