I am getting about 100 Cornish X and plan on keeping them for about 8 weeks then sending them to a processor to bag and freeze, is there any different taste between the roosters vs/ the hens? I see the different hatcheries charging different prices for them if you order sexed.

The only difference I've read about is that the pullets take and extra week or two to make weight. Or they can be processed when they reach about 3-4 lbs live weight for some tasty and tender Rock Cornish Game hens. If you have to send them all to the processor at the same time, the pullets will just be more fryer sized than broiler.

There is no difference in taste. The advantage to buying cockerels is they take a week or 2 less to feed out. We have always bought straight run but we butcher them ourselves.

You will just barely be able to tell the cockrels apart from the pullets at 8 weeks. It really makes little difference, except that you get some variation in weight between the two.
