How do they do it in factories?
Also, the five that mama hatched hatched on different days. Two were born on day 22 (4-4-2011), one born on day 23 (4-5-2011), another born on day 24 (4-6-2011), and the last one on day 25 (4-7-2011).
If breed of the chicken has to do with sexing, mine are mutts. The father of them all is a light sussex. I do believe 2 of the chicks have barred rock moms, and the white spot on the head has to do with the sex right? I'll post pics of them if that's correct. One chick is rather large, even though being the second one born, so I think that one will take after the light sussex's size. The other two are multicolored and I'm not sure who the mother is of them.

Yes their is a way it's called vent sexing. Basically you check its cloaca read about it that's how most factories do it.I myself am not that good at it only being right about 35% of the time.if you wait a month look at the comb and waddles that's when it's easier to tell male from female. Rooster combs start developing then.

Selective breeding on what..?
I don't think I can do that.. Melvin (top roo and light sussex) won't let any other roo mate. I could have purebred cochins but Melvin won't allow the cochin roo to mate, unless he wants to be chased. I could have purebred new hampshire reds but it's the same with that roo. That roo (nhr) is a horrible mater, in the coop he continuosly went on a cochin until I pushed him off and said "enough is enough! get out of here!".
I just don't want the nhr mating and passing his genes, I mean seriously, he is gorgeous but his personality is like poop. But any girls born, I'd love to keep. Just one though.
