Ok in case it helps anyone else, I found this info on Tiagard (aka Denagard) that says you do not need to abstain from eating the eggs.

Still would like advice on if I need to re-dose them, though!

You can give them another round if you wish. Watch to see that the 2 are drinking the water, be sure to sweeten it.

If symptoms persist, then you may need to use a different antibiotic, get some testing if possible.
