is waiting needed after bird is dispatched

I read on another post that chicken should be left 2-3 days before cooking. I normally dispatch it and cook it right there. I normally just do one bird at atime because plucking feathers is not my thing lol. I normally have dual purpose birds. do i need to wait 2-3 days next time?
 
The aging of a bird after processing allows the natural enzymes in the body to soften the texture of the meat. It's completely edible to go straight from the kill to the grill, but the meat will be tougher or rubbery-er.

24-48 hours will allow rigor to set in and release. It's entirely a culinary preference so it's up to you. I'd suggest trying it both ways and comparing the meat side by side and see if you prefer one way or the other.
