Having just been down to the coop to check if the girls have laid this morning, i find my usual bounty of eggs but in one of the nest boxs i find a egg laying in a wet patch of a jelly like substance, is this normal as ive not found this before, or just failed to miss it as its dried up in the past?

Welcome to BYC.
My guess is, its just a hiccup in the egg production. Either excess bloom or extra white that didn't get into an egg. Once does not mean much.
