Jersey Giants

I'm not 100% sure how coloring works. I have a blue Jersey Giant hen and male black Jersey Giant. If I breed them I'll get about 50% blue and 50% black? If I take a blue male and breed it to a blue female will the chance of black be less? Could I breed splash from that? Or will it forever be black or blue?
