At this other place I write at a fireman in California submitted this recipe. You might say WINE in meatloaf... Well let Big tell ya: it is amazing.... So this is JFD's (For Jerry Fire Department) Merlot Meatloaf
Mis en place:
2 lb meatloaf mix (equal parts: veal, ground beef, pork)
1 egg
1/2 cups bread crumbs
1/4 cup chilli sauce
1 tbls brown mustard
1 Tbls herbs de provence
12 oz. Merlot wine
1/2 yellow onion small dice
1 stalk celery small dice
1 cup sliced mushrooms
1/2 cup chopped flat leaf parsley
sauce:
1 cup ketchup
1 Tbls prepared horseradish
2 Tbls dark brown sugar
1 Tbls spicy mustard
Mix all ingredients in large bowl. Place mixture in loaf pan, pat down edges and corners, plop pan 3 or 4 times on counter so mixture compacts. Now cover with foil. Bake in 400 degree oven for 1 hour.
While baking prepare sauce. Add all sauce ingredients into cast iron skillet and heat about 5 minutes until all combines.
Remove foil and add topping and bake for 20 minutes. Remove and let rest at least 10 minutes before serving. Serve with mashed potatoes or better yet with scalloped potatoes. https://www.backyardchickens.com/forum/viewtopic.php?id=172949
