10000x easier to do it all at once!! It usually takes me 1-2 hours to prep before processing. Also for that many birds, it is much easier to get a huge clean trash can to fill with ice and salt water to rapidly cool the bodies down to a safe temp. This takes the strain off of your fridge, and cools them faster (which is safer) than your fridge could. It brines them in the process. I usually leave them for 3-5 hours before moving to the fridge. I let them rest for 3-4 days before cutting them up or freezing them whole. Or rest at least until rigor mortis passes and you can grab a leg and it moves pretty freely..... might as well just get the whole system going once and be done with it for the year.
