Jumbo white pekins, first time culling for meat. Advice?

.... might as well just get the whole system going once and be done with it for the year.
10000x easier to do it all at once!! It usually takes me 1-2 hours to prep before processing. Also for that many birds, it is much easier to get a huge clean trash can to fill with ice and salt water to rapidly cool the bodies down to a safe temp. This takes the strain off of your fridge, and cools them faster (which is safer) than your fridge could. It brines them in the process. I usually leave them for 3-5 hours before moving to the fridge. I let them rest for 3-4 days before cutting them up or freezing them whole. Or rest at least until rigor mortis passes and you can grab a leg and it moves pretty freely.
