Only the females make the buck-wheat call. (And only the females lay eggs, obviously). The females also carry their wings a little lower and when mature they develop a large lump/hump on their back area towards their hind end called a bustle, so their posture is a little different and lower tot he ground than the males. Males are typically more upright, tall and alert with their heads always up looking around for danger... (or just somebody to pick on or something to scream at

Some use the wattles as an indication of sex, but that's not always reliable. Males typically have larger cupped wattles that stick out from the face, Hens usually have smaller flat wattles that lay flat against the face. But due to genetics sometimes males have flat wattles, sometimes Hens have cupped wattles and sometimes either sex can have one of each (referred to as asymmetrical wattles).

IMO, buck-wheating is your best/most reliable determining factor.
