...They said that our birds are ready and that they ended up being about 4 lbs each after processing. We knew they'd be small, but that seems like a good size for cutting up to grill or putting on the rotisserie

We're going to do Meaties next year but this was a fun learning experience.

We'll be keeping 52 and selling the rest, its amazing the private meat co-op we have established with a small network of friends. One raises a few pigs each year, one butchers a cow every time it agrivates him, and we have cows and now chickens so we all end up having what other need and are able to sell it to each other for a much lower price than the store has.
 
do you EAT goat?! Is it good or does it taste like, well, goat? I just sold my pygmies...there are TONS of boer farmers in our area but they all ship the meat to Minneapolis/St Paul as that area is the hot spot of goat meat consumption in MN.
 
The way to do goats it to butcher young, before they get all goaty and tough. And band the young males. Wethers don't stink like intact bucks do.
 
They make goat BBQ around here that is to die for! As the old saying goes it's "slap yo momma good" lol. It's done just like pork BBQ, slow cooked over hardwood coals. The older ones do have stronger flavor. Have you ever had lamb? Goat has a stronger flavor than that but not a whole lot.
