You are referring to not covering the rafter over hang with soffits and a fascia...? Right? There is opportunity there to get ventilation there --yes. But bear in mind predators and vermin with not covering these areas. You'll have to get hardware cloth up there or something.

In my 48sq ft coop I use one 9cu ft bag of pine shavings. When I refill the straw in the nesting box I just grab a chunk off the bale and then throw the extra onto the coop floor. Also I keep a rake in the coop and mix the bedding around every few days
