When can i tell the Male from the Female?

Easiest way to sex it wait till they start getting colors! 6 weeks or so and with that many you will want to put blinders on them around 4-5 weeks unless you have a huge flight pen for them giving them plenty of space.

I hear they can be quite cannibalistic, Are blinders hard to use and how do they go on?

There are a ton if different blinders out there! You can get them with plastic clips(no tool needed) or metal clips (require tool).
