I have experienced multiple rooster spur removals and it works very well.
A bell would be a good course of action to detect him.

I also understand your attachment to him as I've raised many myself and never cooked a single one, so you are not alone there!
I've been a vegetarian for 35 years but I do eat eggs and cheese so cooking a chicken has never been an option for me. They are really pets ... with the added benefit of keeping the ticks under control on our property! Plus they are just so enjoyable to watch!!!

Is he attacking more with his spurs or his beak? The beak can often do as much damage as spurs would pain wise, so watch out for both.
Just spurs! But it's amazing how much power there is in his legs even though I've removed the outer spur coat.
 
He's smart. At least smart enough to figure who he can go for. Maybe bribing him will get him to like you. Good to try that together with your husband.
I can hand feed him treats along with the hens but hasn't seemed to make a difference! I think a bell to warn me when he's near is going to be worth a try. Either way, I'm not cooking him!!!
