Got all the veggies chopped up. Purple beets, golden beets, white turnips, kohkrabi, and baby potatoes. I'm gonna add some salt, sage, and olive oil and pop them into the oven.

For the life of me I can never make my potatoes come out like the ones I have at restaurants or weddings. I’ve baked them in the oven I’ve baked them on the stove, but I can’t get them to be soft without having some of the potatoes being too crunchy.

Maybe 400. My mom cooks them in the oven usually and I cook them on the stove when I put them in my laffa.

You might try baking them at 325 or 350. Those are the temps I bake mine at. If you cook at them at too high of a temp the outside will burn before the inside gets cooked.

If your cooking them on the stove, chop them into 1\4 to 1\2 inch cubes and cook them on medium high heat with plenty of olive oil in the bottom of the pan. Stir them often. If you put a lid on the pan while they're cooking that also helps them get nice and soft.
