Knew it! Literally 2 minutes a side. Cannot overcook a nice steak, especially not venison.

Exactly right. I do thin back strap cutlets that as fast as you can put about 12 of them in the pan, flip, then remove, they are done.

My ribeye was not quite up to room temperature so it got 3min per side tonight.
