Cookies are done:

Idiot Cookies:
1 cup margarine or butter
1 cup milk or almond milk
1 1/2 cups sugar
1 1/2 cups sugar substitute
14 tablespoons unsweetened cocoa powder
Boil together for 1 minute, turn off heat, and stir in:
2 cups peanut butter (used above) or 2 cups unsweetened shredded coconut or a mixture of both
4 teaspoons vanilla extract
6 cups quick-cooking oats
Scoop out with a tablespoon measure or small ice cream scoop and place on waxed paper to cool. Store in an airtight container between layers of waxed paper.

This made 70 cookies this time around, but it tends to vary, as I don't really consistently use the same spoon or scoop.
