We all have different taste buds. To me Black beauty was still bitter after removing the skin. I also did not care for the texture of black beauty.In my quest to make myself like eggplant, I have discovered that peeling the skin off the black beauty variety makes the flavor good. Just the skins are bitter. My Thai eggplant are flowering but have not produced as of yet.
As far as tastes go, I once planted arugula because of all the cooking shows saying how great it is. When it was big enough to try, I picked a few leaves and put them in my mouth. It came back out almost immediately and then I tried to find something to get that vile disgusting taste out of my mouth. I tried to pull out every arugula plant and disposed of them. Unfortunately I missed a couple and would have a wonderful mouthful of fresh lettuce or spinach ruined by the vile taste of arugula.
