Victorinox "Fibrox" Line. They are half decent, have textured cast plastic handles so your grip doesn't slip and so you can bleach the &#!+ out of them when you are done, and they are cheap - so when you inevitably knick the blade seperating a joint in a moment of distraction, you can throw it away and replace it with a new one.
They are very popular with high volume butchers and the guys filleting fish dockside when you come off the party boat.
