That would be fun! I am just starting my "Circular needle journey" with a very daring project. I am going to go on ravelry and find a sock patternYou can knit socks using circular needles. DPNs really aren't as scary as they look, though. The scariest part is trying not to get ladders between the different needles or dropping stitches, but you learn how to tension the yarn and they make stoppers to keep your work from sliding off on you.
I'd find a simple pattern and just give them a try and see if you like them. I think the last time I used them, I knitted a pigeon. Maybe I used them when I knitted some cat toys.
(Don't judge, I mean, okay you can judge him, I do--I overstuffed the wings and sewed him together a bit crooked--he turned out a bit wonk but that's okay, I had fun making him...)

I pretty much knit everything with circular needles now, though and use the magic loop method or 2 sets of circulars. (I'm a ChiaoGoo snob, but not a good enough knitter to justify it).
