Like @sourland said, pick the right birds and feed them well, and you'll not have any worries. Here's an article about different breeds of chickens that highlights some of the better egg layers.

We're silkie breeders and feed a high-protein all-flock and supplement with oyster shell on the side. We do not alter the light hours in winter.

Welcome to BYC. Pick the proper breeds, feed the proper feed, and egg production will take care of itself.
Perhaps the birds need a little more calcium and artificial light? Not sure where OP is located, but in the UK and especially the UK quail-keepers need to top-up the pellets because they have the minimum protein and nutrients required. @Fluff Nugget what are you feeding your birds? What's the nutritional breakdown of the food?
