Not even sure if this is where to post this. I am wondering if you put a rooster on a red star and hatch the eggs will the red star pass down the excellent laying ability? Does it depend on the rooster? Like you would need a breed of rooster that is superb also?

The two Easter egger guys are as follows: 1) Americauna (or so I thought) over a Brahma 2) same “americauna” over what I thought was an Americauna hen

Very good chickens breeds you have also some of my favorites! Yes it is more likely going to pass down the excellent laying ability since a lot of the rooster breeds you listed already have a good laying ability (if they were hens)

You start with who you have! In order to raise egg production, or at least keep it as high as possible, you need to know who your best laying hens are to start. or, do the flock mating system, and hope that by saving eggs for a week or more to hatch, at least odds are that better producers will have more eggs in the basket.
Roosters are no better than their genetics, and selecting cockerels from your best producing hens is what you need to do, and that again means being able to ID offspring individually.
Don't neglect other important selection criteria, like structure, good health (especially for more than one year!) and temperament.
Have fun with your project!
Mary
