I have read that peahens lay every other day. I have one that lays like once a week and I have 2 others that are together and so far I have received 2 eggs. a week apart and the last one 5 days ago. What is going on? Can anyone explain to me what is happening or what I should expect in the future?

True!
Mine too are every other day layers.
How old are the ones in question? Very young birds may be the problem, if they are 3 or better though, you should average 1 every other day

Yes egg every other day till they lay a clutch of 5 to 8 eggs, then they stop for a few days then lay another clutch. most peahens will lay 4 or more clutches if eggs are removed.
