Leftover Roast Goose

What do you guys do with leftover roast goose? That's a big bird for the two in my family.

I've never had goose to eat but gumbo seems like a reasonable choice.

Lol, I haven't had goose since I was a kid and went to my family in Iowa's for Thanksgiving. I think I may be getting geese next spring, but none for me this year.

Goose stew. Basically anything that you would do with leftover chicken or turkey would work. So just replace the chicken in chicken and dumplings with the goose meat.

I sometimes like to course grind the cooked meat and let simmer for a few hours in a special homemade chili. Goose chili is very good.
