I'll start with one! Did you know that the jugular on the right side of a chicken is larger than the one on the left? These are pictures of a chick that I necropsied.

So then do you cut the right side when butchering?
When butchering, I think you want to cut much deeper and get got carotid arteries too.

Here is an older rooster. In this picture, you can see both jugulars.

Did you know that male ducks have an additional air sac that female ducks and other avian species don't have? I about freaked out the first time I processed a drake and saw it.
