lethargic, puffy chicken

I'm not super experienced, but when I hear puffy and lethargic I think Coccidiosis. Usually I'll have one or two get puffy and just sit around, and I treat the entire flock since I've been told if one has it, they all have it-- just might not be showing it yet. Hopefully one of the experts will see this and weigh in, but I thought I'd mention it.

Suzie is doing a lot better to day. she looked around when I checked on her, wasn't puffed up and, I held some food out to her and she ate some.
It's good she ate. Try ensure she is drinking too.
Is there any way you can get photo's? It's very difficult to go by description only as we all see and say things differently.
Did you manage to check her crop? This is important. So no feed or water overnight, then check first thing in morning for an empty crop.

You said she is pooping, can you describe her poop please?

The Poofy face is concerning, but without a photo it's impossible to see what you are talking about. Is is swollen? Which part exactly?

When (if) was the last time your chickens were wormed and what were they wormed with?
Have you checked closely for lice/mites?
Did you give her some Nutridrench or equivalent as suggested by ChickenNanny13?

Can you check for an egg - lube up a finger (vaseline or any oil) and gently insert straight into vent for 1 to 2 inches to feel for an egg. If no egg, it will just feel soft.
While you are at this check her abdomen for swelling. Cup your hand from behind her between her legs and back towards her vent. What does that feel like? Compare to others if that helps.

I haven't checked her crop yet but I will take away her food and water today. her poop was kind of watery. her face isn't puffy anymore. my chickens have never been wormed. I will check for an egg.

I just gave Suzie some food and water because I has only stopped giving her food at about 2:30 and she hasn't eaten or drank water for a about a day and a half I think. I then took it away and I will check her crop in the morning. What is a normal crop supposed to feel like and what is a not normal crop supposed to feel like?

The only 'not normal' crop is one which does not feel empty first thing in the morning. For a healthy chicken (meaning one who is eating and drinking some) a crop can feel a range of ways throughout the day, from their first beakfull of feed or water. This is why it's so important to check first thing before they have any access to eat or drink.
So what you are looking for is a completely empty crop. It should feel flat to her chest, with no liquid or feed in there.
I hope it will be empty, let us know what you find!
