1. Dinde

1 small turkey, about 8 pounds (3.5 kilos)
1 pound (400 g.) ground pork
1 pound (400 g.) ground veal
1 clove garlic
1/2 tsp. thyme leaves, fresh or dried
1/2 cup (50 g.) walnut pieces
1 tsp. salt
freshly ground black pepper
2 tbsp. olive oil
4 cups (1 liter) homemade chicken broth
1/4 cup dry white wine
 
2. Kadhai We can call him Kad for short?

Ingredients​

  • 4 boneless turkey fillets cut into 1-inch pieces
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 2 tbsp light cooking oil
  • 1 tsp whole cumin seeds
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 1/2 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tbsp coriander powder
  • 2 tbsp tomato paste
  • 1 large onion sliced
  • 1 medium green pepper sliced
  • 2 medium tomatoes cut into wedges
  • salt to taste
  • a handful of fresh cilantro leaves roughly chopped
  • squeeze of lemon

3. Piccata

Ingredients​

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (17.6 ounces) turkey breast cutlets
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 3 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon capers, drained
