I will be processing our first rooster today. I have been reading on here, watching you tube videos etc. I have decided to go with the pvc pipe cutters, since I feel most comfortable knowing the head is removed and the bird is dead. I keep reading about the importance of letting the bird bleed out. I am curious how long this process takes? Do I just wait until the blood stops draining? I haven’t really found that much information on it.
Anything else I should know before I start? Anything you wish you had known?

Just hang until blood stops.
They do thrash about, death throws, flinging blood around. Takes a minute or so... seems longer especially the first time.
Make sure you rest in refrigerator or cooler until rigor passes, a day or so...as a kid though I was trying to eat rubber bands.
Cooking depends on age, pressure cooker can make an Old bird tender though.
Cooking methods by age.
