lock down date

If you start a chart with the day you start as day one would you lock down on day 14 or 15 for coturnix quail? And is it 17 or 18 days?
Set day was 17 06 13 at 3:40 PM. And I have hatch day as 3 07 13.
Am I even close?

The lock down date usually fall 2 days before hatch for quail and 3 days for chicken. My chicken hatched on 20th and quail on the 16th so the lock for me would be 17th and 14th days. For those chicken hatched on 21th and quail 17th days, would be 18th and 15th days. I count the day I put the eggs into the incubator as day 1.
