Looking for egg "cupcake" style recipe

I don't know if there is a name for that dish, so I can't really find an interesting recipe!

Looking to do something like this:

But maybe a little more healthy! Maybe not a bun at the bottom? I was thinking of a slice of ham at the bottom of the cupcake mold, bacon around it, then some veggies at the bottom and the egg on top!

The veggies will probably make the thing too wet to take out of the mold.. so anyhow! Seeking a recipe that looks a little like the link, but more on the healthy way if you have any ideas :)

I've done a lot of baked eggs in muffin tins! Canadian bacon and egg whites are great, if you're trying to go lower fat.

You can sauté some veggies and add to the mix too for a bit more nutritional value. Spinach artichoke is a good combination. Roasted red pepper, onion, asparagus...

There is a classic Italian dish called Eggs In Hell where you sort of poach the egg in tomato sauce. Could work in the muffin cup too, I bet, though I've not tried it.
 
If you go to Pinterest and put 'Healthy Egg Cups' in the search bar there is a myriad of options. Egg baked in Turkey cups,in addition of the nummy vegetables that limaro mentions. I myself like to make an egg cup that is from the south beach diet. It's mostly spinach with only a few eggs to the recipe. (maybe two) --it calls for egg substitute but of course I can't do that with the beautiful souls I have roaming in the yard...anyways... chopped green onion, chopped green pepper are the additional veggies and about a 1/2 cup of mozzarella and back in foiled cupcake paper thingies. Makes a dozen or more. I throw them in the freezer and microwave them for the rest of the week. Low carb, protein and vegetable all in a convenient little package.

Never heard about "Egg in hell", I love the name!

On my side, it is not to freeze but to bring at work to give to the coworkers :) I am trying to "teach" them to replace donuts and sweets by other good stuff ;) ahah. Last year I brought them many veggie baskets, and this year 5 of them asked me to have tomato plants!! This is great, 5 people interested in gardening and they didn't even think about having plants last year.

I am also trying to convert them to "almost-free-range eggs" ;). I'll try to sell them my extra eggs, so to do that, I want to bake them some super good recipes so they will want my eggs lol. I also brought them just the eggs so they could taste those alone.

I made something similar once, but I used hashbrowns as the base, it kinda makes a birds nest to plop the egg into.
I like the dehydrated Hashbrowns that you can get from Sams Club, rehydrate them, dry between paper towels and they are good to go.

For simplicity and to have leftovers for quick breakfasts this is how I do it now: I beat the eggs, egg whites (Weight watchers friendly this way), oregano, salt and papper to taste. Stir in hashbrowns, diced ham, onions, mushrooms and tomato. Spoon into buttered cupcake pan, you will need to pour any of the remaining liquids evenly into all the cups. Bake until set. Put extras into refrigerator and microwave to reheat.
You could also just mix the hashbrowns and other fillings, pack into the buttered cupcake pan, break an egg on top and then bake - but I have not done it that way so you may need to experiment to
