I hate flies and we have several gross varieties that love our hot wet humid climate and my chicken poop.
For me what has worked well in my experiments this summer (I am southern hemisphere)
1) Fermented Feed - the poop after a while on FF has less smell, and seems easier for me to pick up and put into a plastic bin that I later transfer to a very hot composting pile.
2) I pick up poop more often and thoroughly when more flies appear than the day before -it seems to come in waves at times. Sometimes I can go 3 days without picking up poop, other times its a daily thing.
3) Stripping out all material - sometimes I have to clean everything out once a week other times every 2 or 3 or 4 weeks and I give a spray of some combination of herbs and garlic I have in the cupboard......seems to be less now the flock are established on fermented feed.

I have accepted I cannot control fly breeding cycles that occur outside of my coop/pen/paddock, some days there are masses of them coming from my rural district and invading me, other days I can sit on my verandah peacefully and not see one. I changed nothing, nada, zip...the flies just appear like locusts.
Your chickens IMHO have nothing to do with breeding flies, the first thing a chicken does when it sees a maggot is eat it.
If a fly is silly enough to linger they will eat that as well, just like my dogs who snap at flies.
A BBQ draws flies and so does a lot of stuff including your neighbours dog poop and poorly managed compost pile.

The last idea I have, probably a silly one, but if you can run a good sized fan over the coop/pen area on the bad fly days it disperses them pretty quick. Perhaps trying to aim the fan at your house or towards a sticky mat, once a sticky mat has enough flies it attracts them all from everywhere, so hide them from snooping eyes as these are NOT your flies.
