For canning, is it absolutely necessary to have a pressure canner?

For anything non acidic yes. I prevents botulism because of the higher than boiling temps. I use a water bath (big pot) for jellies, pickling, and non GMO tomato products. The GMO tomatoes are made to have little acid so they don't work for water bath and the sugar content in the jellies makes them so you can do a water bath. Everything else including meat I use the pressure cooker for.

X2. Outdoor kitchens are wonderful. I wish we could build underground here it would make it so much easier to store things not to mention no need for a/c if your whole house was underground. We have several generators here because it seems that when it gets the hotest the electric company has a "glitch" and everyone in town looses power.

I didn't want to talk about building underground because I didn't want anyone to think I was even crazier than before since I was involved in that fire "thing", I didn't want to add on to another level of cray cray (crazy).

That would be ideal to build underground. Now we talkin' !

Oh, and as for an update on the chickens...I'm down to one old, blind rooster. I'm going to get a few hens when I move out though, I miss my fresh eggs.

I have the better of two electric companies in town and I live outside of city limits. When it gets soo hot in summertime that just looking out the window makes you sweat, we loose power and I think of the cooling powers of the earth. By time I loose power I already know the other side of town has been out for hours so I can't even go to walmart for relief. And of course because I live outside of city limits, mine is near the last to be turned back on. The only good news is the cable goes out about an hour before the electric so you expect it. I swear they have overheating issues!

Oh lordy I work with all different kinds of horses.
Mainly, I do thoroughbreds and warmbloods. I work them in dressage, show jumping and cross country. But I'll do western every now and then.

My husband played with cutting horses for years. Now I keep racing quarter brood mares.

Our power company has finally improved over the years. There was a time, that if the wind blew (at all) the power would go out. For the longest time, there were only two houses on our road. So, when the electricity went out, the other house has an entire house generator, so they would never call about the outage!!! We finally have two more houses on the road, so at least we get fixed a little faster. Not sure how I feel about neighbors though.

I was a "city girl" years and years and years (you get the picture) ago. Now I LOVE living out. We are just far enough out to discourage idiots!!!! Not all but a lot! Now the idiots just dump their animals and leave.

Sounds neat! I'll be going to Facebook now to look them up. I just bought a magazine at Sams about canning your own food...Like I need one more thing to catch my attention. Maybe if I stop sleeping I'll find the time to do more things.

I forgot to mention that there is another white rabbit roaming around the neighborhood but he mostly sets up camp at my house. I have been seeing him for a few months and I would talk to him as I drove by the property on my way home. He comes over every day to eat. Recently he has become VERY comfortable in the chicken yard. I have caught him in the rabbit shed "chillin out" and lounging with the chickens. Last night I found him sleeping with the ducks. He is getting more and more tame where I can get close to him. I think he and the other white rabbit that I caught may be from the same place but I don't know where. I thought about catching him but at the same time, he has survived for months on his own, so I may let him roam. I would hate to cage him up because he is accustomed to being free and I kinda like seeing him just running around.

I tried to get a pic of him before he hopped away.
