According to the "canning police" (aka the snotty busy body old ladies who WILL yell at you and tell you that you are going to kill your whole family if you so much as THINK of stepping out of line) and the USDA even the pressure cookers we use at home still is not enough to evenly distribute the heat for long enough to kill of botulism in an item as dense as pumpkin. That's what they say anyway. I sure wish there was just a quick swab test you could do to detect if there WAS botulism in a jar when you opened it. Then I would can up TONs of stuff that would just make those canning police ladies heads explode!!!
Then there are the conspiracy people that are of the opinion that the USDA and the big food companies are conspiring against us canners.![]()
I really am not an expert. So I usually just follow the guidelines. But I do know there are plenty of people that do can up both of the items I posted yesterday.

I would rather smell burning bodies then botulism. As it grows it releases gas like when you are making sauerkraut, if it is not released the lid will bloat. The USDA is an excuse for the government to spend money to keep the stupid people from killing themselves. I have seen people eat cheese rinds wax and all and think the cheese tasted funny. Because they grew up on sliced cheese they never knew what it was.

btw I have seen that picture of the newspaper ad before. It cracks me up because I have one friend that would not take ANY eggs from me. Not even for free. She thinks its disgusting that we eat them. And you don't even want to know her reaction to us raising meat birds. I guess if the eggs are in a new box at Wal-Mart that means they are better than fresh out of the chickens butt. Well I have news for her. The eggs at Wal-Mart came out of a chickens butt too only mine are WAY fresher. I never offered her eggs again. Goofy.

OK I LOVE your logic!Haven't you heard about the rule that " if you change the striping day from Friday to Thursday all staff must still leave early on Friday in the same manner as though the striping had, in fact, occurred in Friday"? This is a well known rule and you are required to follow it.
