"Louisiana "La-yers" Peeps"

Lamb sausage ingredients
2 lb Lamb, fat removed
1 lb pork
1⁄4 lb Fresh fatback
2 T Cayenne pepper
1 T Cumin
1⁄2 t garlic Powder
2 t Salt

Cooking Lamb sausage
1. Ask the butcher to grind the lamb, pork, and fatback together, or do it yourself in a meat grinder.
2. In a small bowl, mix the pepper, cumin, garlic powder, and salt with 4 tablespoons of water.
3. Put the meat in a large bowl.
4. Add 2 tablespoons of the spice mix and knead it in with your hands.
5. This amount makes a fairly hot mix. If you don"t like spicy foods, use 1 tablespoon of the mix, then fry a bit of the meat and taste it. You can always add more if it"s not hot enough.
6. Either pack the mixture into sausage casings or shape it into patties.
7. When ready to use, heat them in a covered pan with a little water, then remove the cover and cook the sausage until no redness shows.
8. Makes 20 5-inch links or 14 to 16 patties.

Tell you the truth, I haven't looked at their vents until the last two days since I did inspections for pasty butt when they were babies. One thing I read about it said to lubricate your finger and explore inside the vent. Sorry. No can do that.

It doesn't stick together after its ground very well. I love lamb. Hubby doesn't lol. Mmmm lamb chops pan seared in sliced mango and butter...
Could it be that there isn't enough fat on it? I have to mix my ground deer sometimes because of that.


Oooooooooo, so that's the reason. You all are making me hungry. I think I'm going to take a pack of lamb chops out for the weekend. :drool

No bad smell. Matter of fact trying a lot to get fotos and exposing her vent for fotos, I was close to her vent a lot and there was no smell. It does look like dried yolk now that I have been talking about it. Not red or swollen. Not drippy. No other color. Just dirty with yellow kind of dried up stuff.

Gleet is apparently a word used for many conditions with the discription of stinky sticky stuff on vent. So that rules those out. Some posts referenced sitting on a broken/soft shelled egg or having broken one inside. Some pullets will lay 2 eggs in one day with one of them being soft shelled and sometimes they break it open or eat it. Let's hope for that option. The other option is is an egg breaking inside of her. How long has she had this on her vent? Can you wash it off and see if it comes back? I'm still searching for other options.
 
I also was wondering if it can be wiped/cleaned off..........

Im curious too lol lamb is always really greasy as I cook it...I thought it had lots of fat. But doesn't stick like ground beef. Huh

You could try to add an egg and see if that helps it stick. For meatloaf and burgers we add one egg for ground beef and 2 eggs for ground chuck to make it stick. Now, I don't cook with lamb so I don't know how well it will work but the principle should be the same.

Thank you so much. I have only looked at her vent yesterday and today and the yellow was there. I think I'll clean it off tomorrow and see what happens. I really hope it is a soft shell she sat on. She's not acting like a chicken with a broken hard shell inside her from what I read on it. She acts completely normal. No red, no blood, no drip, no swelling. Hoping for the best. Tomorrow will be vent cleaning day. I will be a vent expert when this is over. I read somewhere to clean it with coconut oil. I don't have coconut oil, could I use olive oil?

What do you suggest to use to clean it. Just warm water on cloth? Or olive oil? Or?
