"Louisiana "La-yers" Peeps"

Hey, I have GOT to share this recipe with you guys. If you want a cake that is blow-your-mind good and pretty much guilt free (This is a WW recipe, made even healthier by my modifications)

Pumpkin Praline Cake

15 oz canned pumpkin
12 oz fat free evaporated milk
1 large egg
1/2 cup of splenda (or sugar if you don't use artificial sweeteners)
4 tsp pumpkin pie spice
1 box of spice cake mix
1/2 cup of chopped pecans
1/4 of a cup of fat free "I can't believe it's not butter" , melted

  • Preheat oven to 350°F. Coat bottom and sides of a 13 x 9 x 2-inch baking pan with cooking spray.
  • Stir pumpkin, milk, egg, sugar and pumpkin pie spice,and 1/2 of the cake mix together in a medium bowl until smooth; pour into pan. Sprinkle dry cake mix over pumpkin mixture and gently press it into pumpkin mixture to moisten. Sprinkle cake with pecans and then drizzle butter evenly over top.
  • Bake, uncovered, until knife inserted in center of cake comes out clean, about 50 to 60 minutes. Cool completely before slicing into 16 pieces.


I tried this recipe today while looking for healthy Thanksgiving desserts, and it was just AMAZING!


You must try the recipe I posted last night!!! It is amazing, and you would never guess by the amazing taste that is it relatively healthy!!!!!!

I hadn't even considered that one. I could convert it. Of course I convert all my recipes to GF now. But I usually just pass over ones that say things like "splenda" (I think its poison!) and "I can't believe its not butter!" No offense to those that use products like that but its made a huge difference in the way we all feel when we removed as much products like that from our diet as possible. And even though I don't have a GF cake mix in the house I did a search and found a recipe for a homemade dry cake mix. I will try it! Thanks!

Yeah me too I missed out going as we had to make up a two day racing event due to previous rain outs and best of all WE WON that was worth it all.

I planning on being there next year with winning birds in hand too (I hope) these things I got blood sweat money and tears in need to prove their worth other than prettying up this joint around here LOL

Thanks, Kuntrygirl. It has been a great day. Amanda and I skipped church, God loves us anyway. We got most of the plywood roof on the chicken shelter. It was the two biggest pieces that would be hard for me by myself. We lost track of time and I was late taking her to rehearsal for the Nutcracker. If I have mentioned that before please forgive me, it's just a proud Granny that she is dancing in the Nutcracker for the 2nd year. Granny are allowed to brag. I'm going back home to finish the plywood roof and hopefully get the shingles on so I can get them out of my trunk. Went to Lowe's to buy two packs of shingles ($50). Not happy bec up to then the shelter had cost just about $0. Lucky for me they had two packs that had messed up wrapping and I got them down to $15 for both. I was do happy. But they are super heavy, so my thought was to take them out a few at a time as I put them on the roof. So I've been carrying them around in the car for a couple of weeks. Lol. Off to work on my shelter. I love doing it.

We had both a good Red class and a good NH class at the show.

We have a couple of things in the works with a few different breed clubs for our show next year. If it all gets worked out, we could easily double the Bantams and triple the Large Fowl entries for next year. We were talking this morning.....we might need to buy some coops!!!!

Good score on the shingles! Keep us posted on the shelter. Would love to see pics.
 
Is everyone getting their Thanksgiving meal ideas together? I'm getting several requests for people wanting ducks and geese. Last year grocery store price for a goose was $65.00. Not sure I could eat a goose though.
 
New, or re-new to this thread. Kunrtygurl, my wife & I were discussing Thanksgiving plans yesterday, and I said I wanted to try a goose this year! Also, I took a look at your webpage and would like to talk with you about processing different birds.
