If I want to encourage my hens to brood would I need to leave the eggs in the nest boxes for a few days? Or will they just start sitting in box when they are ready with only one or two eggs?

Both! I've had hens go broody over empty nests, but my current was solidly DH's fault. I left town for a week and he didn't collect a single egg. (He thought they could sit outside for months??) And two days later she was broody. So, ultimately it's her decision. But I don't think they can resist a big pile of eggs.
 
If your piped chick hasn't broke out the egg by morning I would help. First break a whole in lining by where it piped to make sure it has air.If you feel movement maybe spray with water or that damp paper towel and gently whipe egg put back in bator. If It seems shrinked wraped open slowly if you see unasorbed yolk leave it be. Pam

Pam, do you still have the XW rocks? Was wondering how they've done for you.
I still have the hens The roosters were killed by predators 2 weeks ago. I think I'l getting a good Good shepard roo replacement. They are just as nice a line. I like them they are calm and will let you handle them. Pam
