I do like Julie, roux, onions bell peppers, green onions, celery, etc. I put my okra on a cookie sheet and cook it in the oven for awhile, Helps get alot of the sliminess out of it. I use your basic seasonings (Slap yo momma, garlic powder, salt, pepper, cayenne, bay leaves, etc. Oh and it's always chicken & sasuage!! My hubby can't stand seafood gunbo!!

And my favorite thing about it is it freezes beautifuly!! Nothing like coming home and having gumbo in about 25 minutes!!

We went to my Mom's and cleaned her back yard. The I worked in the coop till dark. Got a bag of lime spread and 3 bales of hay out!! Looks so good in there!! Went to Home Depot this morning and got the stuff to make my coop. It's almost finished. Had to come inside for some lunch and let the batteries for my drill charge!! I probably won't get the roof on today but since there's no rain forcasted for the next 10 days I should be good!!

Have to go to another funeral <sigh> some friends lost their 16 year old son in a car accident Friday afternoon!! They were our next door neighbors for 6 years!! So sad!!

See... that's what I'm screaming!!!! Roux and file....at least roux....These people around here use rotel...????seriously???? ugghhhh..... Their is no Italian(red sauce) in gumbo!!!! lol... Oh and BTW.... Fish gumbo is nahsty....Just sayin....lol....

Sorry to hear about your friends son.I am sooo terrified of that.One of the main roads to my house is a horrible road.So many wrecks and deaths on it.I quit even driving it.So many kids out here I hear of driving drunk and wrecking.I'm so afraid one of them will be on the road one day at the wrong time...and the bad thing is...they get no punishment for it.They say,losing their best friend was bad enough.??? No it's not.Brett Favre (I know all of you know who he is) is a local boy.Family grew up here,dad coached us in high school.He gets a small fine for drug use by the NFL,His brother driving drunk gets his best friend killed by driving in front of a train gets 90 days probation,sister gets busted in a drive by shooting in Slidell gets nothing,she then gets busted in a meth lab and...gets nothing..... I hate driving.So I travel very little.Meeting Twiley a few weeks ago and Harry a couple months ago,was the farthest I had driven this year.

I kinda figured that an injectable was on the market but not available at my vet's office because she said that the only Baytril that they had was a tablet form. She said that she had no idea how I was going to give it to my duck. I was like, "Huh". You put it in his mouth. DUH.

She told me to crush it up and mix with water. I wasn't gonna do that. I have given the Baytril tabs to my turkey before, so I already knew I could do it. And I did. All I did was catch my duck, place him on a high flat surface, open his mouth and place the tablet near the back of his mouth and allow him to swallow. I'm sure the injectable would be easier but they didn't have it. I wonder how much Baytril is online at Pet Meds.

Gumbo.....

3/4 cup of bacon drippings 1 1/2 cups all purpose flour 6 stalks celery,chopped 3 large yellow onions chopped 1 bunch green onions chopped

1 green pepper chopped 4 cloves garlic minced 1/2 cup parsley chopped 1 pound okra sliced 2 tablespoons shortening 4 cans chicken broth

2 quarts water 1/2 cup worshestershire sauce 1 can rotel tomatoes Tabasco sauce to taste 8oz tomato sauce 16 oz tomatoes diced

2 tablespoons salt 1 large ham steak chopped 3 bay leaves 2 cups cooked chicken chopped 1 lb claw crab meat 5 lbs shrimp 1 teaspoon brown sugar.

Heat bacon drippings over medium heat,add flour slowly and stir constantly until roux is a chocolate-like brown.(This takes a long time) Add celery,onions,
pepper garlic,parsley,and cook 45 minutes to 1 hour stirring occasionally. Fry okra in shortening until slightly browned. Add to first mixture and stir well for
a few minutes. Add chicken stock and water,Worchestershire sauce,Tobasco sauce,tomato sauce,tomatoes with juice,salt,ham,bay leaves. Simmer for
2 1/2 hours. Add chicken,crabmeat shrimp and simmer 30 minutes more. Add brown sugar and stir until it is dissolved. Serve and eat.

I use the rotel in mine for the extra tomatoes and peppers. It turns out pretty good but I still end up modifying the recipe as I go...The roux is the trick in any gumbo.
If you start off with a crappy roux the gumbo ends up the same way. The roux usually takes me 45 minute to a hour or longer. Keep the heat for the roux at medium or lower
so the flour stays the chocolate brown and doesn't burn.
I usually add filet to thicken it up and I use the okra and tomatoes we canned together and I don't fry the okra at all.
Now I am wanting gumbo.
