Making a large chicken breed

I'm debating on whether to focus more on weight of the bird or height... I'm leaning towards height, but idk.
Probably both. Longer legs would help with excess weight from the birds bulk.

I know large birds take a long time to reach full size, so I'm going to add something for accelerated growth.
If you want adult chickens that are very large and also healthy, you probably need slow growth.

Chickens that grow quickly to a large size are more likely to have health problems (extreme example: Cornish Cross meat chickens. They grow very fast, and if you can keep them alive to full maturity they can be quite large, but they usually have major health problems by that point.)

In England indian gamefowl or indian game means cornish
Indian Game, are just now mainly called Cornish Games, or Just Cornish nowadays.
Think that's where the confusion came from when you just said Indian Gamefowl.
