making goat cheese with fresh milk

anyone else make cheese form their own goats milk??

tonight was my first attempt at making some chevre. we'll see how it turns out in the morning.

also, anyone know where to find a good, cheap hard cheese press? the cheapest one i've found is from grape and granary for around $70
 
you need to contact Miss Prissy, she is the queen of cheese making around here, and every thing else. Now I am telling you gospel!! Go look under eggs, chicken, etc. recipes.

Yes, I make cheeses. For a cheese press, I started with a simple straight sided can, both ends cut out, with holes drilled into it. Drill the holes from the inside out!!!

For a weight, a piece of wood with full vegetable cans on top.

Then I realized I could use my old sausage making press.

i used chevre starter. heated milk in water bath to 86 degrees, added starter, slight whisking, then let it set for 11.5 hours and then drained in butter muslin for about 10 hours.

my boyfriend said it tastes awesome and he loves it, so i dont know if thats how its supposed to taste or he's just buttering me up

After we tasted it at home I looked at the ingredients & it was a basic Chevre with vinegar to culture it. Thank Goodness it didn't influence our purchase of our Doe.
