I can't answer your "organic" question

Co-worker now says we need not be concerned about organic treatment of parasites with dog so that is not an issue.

Another problem being considered is what shall be the best holding option for dogs during off season. We will have too many to run as actuall pack with goats and sheep.

You can buy a 50 ML bottle of Ivomec for about $40

It takes 0.1 ML per month to treat a dog for Heartworms

That's 500 doses per bottle, at 8 CENTS per dose

That is true, but some people like being able to just give the probably prepared dose available at their vet office. The price that I quoted was for something like Heartguard.

I also remember being told that you shouldn't use Ivomec on some collie or shepherd breeds, but can't remember if it is an old wives tale or not. I never owned one so I never followed up on it.

How big are your Maremmas?

95-130 lbs

That is true, but doesn't apply to the LGD breeds, just herding breeds

Yeah, sorry about the randomness of it, but it was just something to mention when suggesting that ivomec can be used on dogs without adding any qualifiers.

Separate from that and directed back at the original post:

Why do there need to be 3 back up dogs?

I'd keep at least a few animals with them all the time.

They will also need room to run around to stay in shape and to keep them from getting bored

You may be able to put some of the dogs together without problems, but some simply will NOT get along with others.

You "can" leave a pair (or sometimes more) of dogs together without a "flock" to guard, but they do NOT like being left alone

You're correct and I should have mentioned it myself
