A different use of maple syrup, but very, very good!
Best Greens Ever
2 large bags frozen mixed greens or tons of fresh greens, washed, chopped
Cook greens in boiling salted water according to package or your usual method.
Drain very well.
4 TB olive oil
4 TB maple syrup
4 TB apple cider vinegar
Pour over drained, hot greens and toss really well. Toss some more and taste. Add some salt and pepper to your taste. Add a little more of the maple syrup or vinegar to taste. I almost always add another TB of vinegar. Serve hot. I usually make half of this recipe, just halving the oil, syrup, and vinegar. It is important to really toss and mix the greens with the added liquid ingredients..
