Okay, trying to figure out my day count.. if I set late on a Saturday night, and it's now a week later on Sunday, am I day 7 or 8?

If you set on a Saturday night, they should hatch in a Saturday night.

It's both Day 7 and Day 8.
I'll explain...
Today is still Day 7, until the same time tonight that you set them last week. Then begins Day 8. It will be Day 8 up until the same time tomorrow night, then starts Day 9.

It's not the calendar day you set the eggs that matters, but how much time has passed since you set them. Each 24-hour period counts as a "Day".

Let's assume you set your eggs at 10pm on Saturday 2/18. Saturday was "Day 0" until 10pm when you set the eggs - then began "Day 1". Day 1 ended at 10pm on Sunday. Day 2 ended at 10pm on Monday. Day 3 ended at 10pm on Tuesday......... So Day 7 ends at 10pm tonight, Sunday. And Day 8 begins AFTER 10pm tonight until 10pm tomorrow night.
