I've heard that guinea fowl will mate for life. Is this true? I only have one cock and 6 hens. I'm hoping they'll breed and hatch eggs so I don't have to buy keets every year.

Only in the wild, or if you only have one pair. They do pair up, but they don't necessarily stick with the first mate they choose. My Guineas change mates multiple times each season, in all my flocks... and my males are opportunists and will breed any Hen they can, even if another male has claimed her (if they can get away with it), lol. The Hens don't really care, as long as they get bred, lol.

1 male may not be able to cover all 6 of your Hens, but his chances will improve if they are allowed to free range daily.
