Maticoopx 20 for serama eggs - humidity question

I have 11 developing eggs in a Maticoopx. The breeder I got the eggs from suggested I keep the humidity at 45% for the first 11 days, then go into lockdown day 11 and bump up the humidity to 65%. She said if I do this, she guarantees the eggs will hatch day 19. (She is a show breeder and has been breeding for 11 years.)

I'm having a crap time maintaining the humidity at 45%. I'm using a Govee inside the incubator, and the humidity will fluctuate from 45%, down to 30%, I put some water and sometimes it goes up to 57%!! I remove some water in the morning when I get up with paper towels and it'll go back to 45-48%

I don't want to screw up the hatch/hatch rate. I paid $60 for the eggs 😬 I'm not using the fill-up bottle, I'm just putting a little water in at a time with a cup, so I think the water will dry up and drop to 30%. I put in water last night and it bumped up, was 57% this morning when I woke up. I have a 7 month old baby, so I'm not on my phone constantly to check for a Govee notification. The incubator is 6 days in so far. Is my hatch screwed with the humidity fluctuations?

(I think I can fix this by using a baby medicine syringe and recording what mL amount gets it to 45%.)
