Mean roosters attacking hens

i used to have 7 roosters but then my dad went to the butcher with 5. We kept two of the super sweet roosters. but now they are really mean to the hens. blackbeard will follow the hens, specifically daisy, and jump on her back and pull at the feathers on her head. then hedwig will rush to the hen's aid, but once, after he saved her, he attacked her and pulled out some of her feathers. i dont know what happened to them being so sweet.

It sounds like they are mating.

Once you got rid of the dominant roosters, they took over.

Yes seriously. And if a subordinate roo manages to catch a hen and mate her and the alpha catches him at it, then the alpha will turn around and mate her. Boys will be boys.
